Meatloaf with Caramelized Onions, Wild Mushrooms and Tomato Sauce

Nothing like a bout of tomato sauce, redolent with onions and garlic to take the edge off a cold rainy afternoon. Simmer with oregano until the tomatoes break apart and soften.
To further take the chill off, a pan of sizzling onions, slowly caramelizing fills the air with the most seductive aroma. For this meatloaf dish, I added a hit of apple cider vinegar for tangy lift.
The onions will be used to adorn the meatloaf. Meatloaf can consist of any kind of ground meats from veal and bison to pork or beef, in combination or not.  My meaty beauty of veal, bison and pork was spiced with more onions, garlic, mustard and some leftover iguana mole sauce.
Pine and chanterelle mushrooms were given a quick saute and lo and behold, tomato sauce, meatloaf smothered in onions with a side dish of wild mushrooms and dinner was served.
