Cheese on Toast

This little ditty was a staple of my childhood. We called it either cheese on toast or Welsh Rarebit. I understand that it’s not exactly the latter but having an English mother, who were we to question?

The recipe is simple and with just an ability to grate cheese and watch the oven on broil, this delicious snack was and is a comforting standby.
Grated orange cheddar, Keen’s Dry Mustard, dried parsley and an egg or two. Mix together and spoon it over white bread. These days I use freshly chopped parsley from the garden and good bread –  slices of boule from Fol Epi artisan bakery are perfect vehicles.
Broil until bread is toasted on the edge and cheese is bubbling with brown bits on top.
