Easy Elegant Summer Salads:Watermelon and Goat Cheese, Fennel and Orange

Watermelon and goat cheese is an unlikely combination but completely refreshing as a starter or elegant finish to a meal on a hot summer day.  Crumble goat cheese over four wedges of watermelon. Drizzle with sublime olive oil and sprinkle with sea salt and coarsely cracked pepper. Served al fresco on an oversized white plate with sunlight dappling the surface, this dish is sure to wow your guests.

Another one of my summertime favorites is the combination of fennel and orange. Thinly slice a half of a fennel bulb. A mandolin is best. I like to section the orange over the bowl that holds the fennel slices so the citrus juice flavours the salad. I also like the addition of chilie flakes for a little zip. Drizzle with a bit of good olive oil and a bit of sea salt, nothing could be simpler or more tasty.

Options: You can add thinly sliced apple or celery for extra interest. Make a light vinaigrette or add a bit of mayo. Whatever combination you choose, this salad is wonderful served as a side dish nestled beside a shrimp sandwich.
